Restaurateur Shang Skipper is leaning into Southwestern flavors for his new fast-casual taco joint. Comal Taco Co. — named after the traditional Mexican griddle used to cook tortillas — is targeting a Dec. 1 opening. It will be located at Optimist Hall. Comal is taking the food stall space previously occupied by Marina’s Tapas, which closed this month. Comal will dish up carnitas, chicken adobo and blackened shrimp tacos as well as a traditional ground beef option. Skipper expects the Arizona-style cheese crisps — an open-faced quesadilla made with thin flour tortillas — to be a favorite.
