Chef Shari Lynne Robins is returning to her restaurant roots, drawing inspiration from one of her personal favorites as she tackles her first solo venture. Robins has signed a deal for Sharigato, a 1,438-square foot restaurant set to open this fall at the Joinery in Optimist Park. Sharigato will be a high-end, fast-casual sushi concept focused on the art of temaki — or hand rolls. The concept draws inspiration from Kazu Nori, Robins’ favorite restaurant with locations in Los Angeles and New York City.

Each roll will be handcrafted, with diners getting a front-row seat to the art of preparation. The cone-shaped style of sushi is wrapped in crispy Nori and filled with warm rice and ingredients such as yellowtail fish, Faroe Island Salmon, diver scallops or lobster. There will be vegetarian rolls as well. Think options with umami mushrooms, or the eggplant unagi — a roasted eggplant with eel sauce —  or the Ube Tempura purple sweet potato option.
