As food halls gain in popularity across the U.S., next up in our area is Concord. The owners of the former Gibson Mill have announced the arrival of a new food hall and market, coming in early 2020.
Gibson Mill Market will have 17,000 square feet of retail space to host 10-12 local venders, including a 2,700-square-foot full-service restaurant.
“We’re excited to start talking about the project,” Thomas Moore, business development director, told CharlotteFive. “It’s been a long time coming. We are delighted to bring food and community together in a creative, innovative way.”
The owners said they are looking for diverse, creative and innovative flavors to curate the market. Prospective tenants include pizza, Mexican, small plates, ice cream and coffee vendors.

Food halls already do a good job of being reminiscent of a time when shoppers would spend time going to a market, shopping from a curated collection of foods and ingredients. Having a food hall in an adaptive reuse space will certainly only add to that throwback feeling.
This space, the historic Cannon Mills Company Plant #6, is one of the area’s largest adaptive reuse projects, at 656,000 square feet on 48 acres. Formerly known as the Gibson Manufacturing Company, Gibson Mill was a producer of bedding, sheets and towels, shipped internationally. The property currently hosts retail, craft breweries and office space.
“This place is so special as is. It’s going to be really cool when we get the right vendors and partners in here to bring something fresh to Concord. It’s going to be a destination,” said Tom Cotter, Southpaw Investors Partner.
